Copy outgoing emails from a domain?

I have read it is possible using mailscanner to copy outgoing emails from a domain (I wan't to know what my employees are sending and receiving), is there any guide to do this?

We don't have a guide for doing this but if you look in the MailScanner Configuration (or /usr/mailscanner/etc/MailScanner.conf) and search for "Mail Archiving and Monitoring" you will find instructions.
