One client on dedicated server getting large amounts of spam

I have about 50 clients on a dedicated server with Hostgator. About 3 weeks ago, one client reported she'd begun receiving hundreds of spam emails per day, this happened suddenly. Emails are all coming to the same email address, there's no consistency in where they're coming from.
I'm adjusting the Mailscanner low scoring and high scoring spam settings downwards every day. Right now it's at 3 for low scoring and 14 for high scoring, but the amount of spam is still very high. I'm forwarding high scoring spam into a separate account.
I'm a new dedi owner and new to Mailscanner - is there something else I should be doing to help this client?
