SOLVED. Changed timezone on server from UTC to UTC-4. Changed back and started working again. Not sure if I waited 4 hours if it would have started displaying in log or not. This only affected MailControl and MailWatch not SQL logging.

MailControl not logging emails
Tried everything I can think of but can't get MailControl to log emails. Worked fine for months but after server reboot it stopped working. Everything with MailScanner seems to be working fine.
